Banana muffins

Here is something quick and simple.

Banana muffin recipe with a peanut butter topping. Makes 12 muffins.

Preheat oven to 400 F

Ingredients
2 cups all purpose flour
1/4 cupsugar
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg, beaten
1/3 cup vegetable oil - (I use canola)
3/4 cup mashed banana
1/2 cup chopped walnuts. (have yet to add this.)


Grease 12 cup muffin pan or 24 of the mini.
Sift flour, sugar, baking powder and salt into a medium bowl;
make a well in the center.

Mix milk, egg, oil, banana and walnuts in a small bowl.
Pour mixture into well.

Mix batter just until moistened; do not over mix.

Spoon batter into prepared muffing cups.
Bake until a a toothpick inserted in center comes out clean or until muffins are golden brown, about 15 minutes.

Now the topping original recipe

1 cup creamy peanut butter
1/2 cup butter at room temp
4 cups powder sugar
1/4 cup whipping cream.

Blend peanut butter and butter till smooth.
gradually blend in the whipping cream till nice and fluffy.

I dumped the powder sugar (no powder sugar, great on chocolate cake though)
and used a little less than 1/2 cup butter more like a 1/3
I upped the whipping cream to 1/2 cup I eye balled it. I just kept pouring till it started fluffing up. : )

I appreciate this recipe. My brother and niece will be coming to visit in the next few weeks and we would all love this; especially your original peanut butter icing.
